The Region Coast
The Costa region also known as the coastal region or simply as the Coast is one of the four geographic regions into which the Republic of Ecuador is divided. It is located between the Andes mountain range and the Pacific Ocean.
The Typical Dishes of the Coast
The Coast, where dishes such as rice with stew and meat, dry, sausage predominate; those prepared with green such as bolón, tigrillo, patacones; and of course, shellfish, shrimp, crab, fish, and many other delicacies.
The encebollado whose meaning is food seasoned with a lot of onion and seasoned with spices is a typical Ecuadorian dish originating in the coastal region. It is considered the flagship dish of Ecuadorian gastronomy.
